Low n Slow Smoking Masterclass - Brisket & Wings

Step into the heart of the Hunter Valley for a cooking experience like no other—set against peaceful rural views and country air that makes everything taste better. For 19 years, we’ve been bringing people together for food, stories, and a little bit of smoke magic.


Join us for our Outdoor Low & Slow Smoking Class on our 100-acre property, where Pitmaster Chef Ben doesn’t just teach you how to cook—he takes you on a journey. Between bites and smoky aromas, Ben shares tales from his travels and food adventures, making every moment as entertaining as it is delicious.


While the Traeger smoker works its slow-cooked wonders, you’ll dive into the secrets of:

  • Selecting the perfect cut of meat
  • Building flavours with rubs, sauces, and smoke
  • Timber and smoker types (and how to master them)
  • Timing, temperatures, and tricks of the trade

You’ll also roll up your sleeves to create:

  • A bold brisket rub
  • Our crowd-favourite barbecue sauce
  • Honey mustard slaw
  • Smoky, indulgent mac n’ cheese

As the meat comes off the smoker, the feast begins—brisket that melts in your mouth, wings with irresistible flavour, and sides that you’ve crafted yourself. Wash it down with a complimentary drink while soaking in vineyard views, or take your bounty home for later indulgence.
